Maybe you are planning to cut some carbohydrates from your diet, or maybe you have a gluten allergy, but you don’t want to miss out on a crunchy pizza. Whatever the reason, cauliflower can be an unexpected but tasty substitute for any pizza crust.
Egg and cheese both serve as flavor-enhancing binders in this recipe, and there’s a bit of headroom with the type of cheese you use – for example, it can be Parmesan, goat, or mozzarella or all of them, you can play with the combinations to taste, too. Pick your favorite sauce and toppings and make this delicious gluten-free cauliflower crust pizza with this healthy alternative to a dinner-time classic.

Gluten-free pizza with cauliflower crust

Ingredients (8 servings)

  • ½ head of cauliflower (about 2 cups if chopped).
  • 1 clove garlic, minced.
  • 1 cup shredded part-skim mozzarella cheese.
  • 1 organic beaten egg.
  • 1 teaspoon basil.
  • 1 teaspoon oregano.

Instructions

  • Preheat the oven to 200 ° C (400 ° F).
  • Prepare a cookie sheet or pizza stone. Grease the tray well so that it does not stick.
  • Remove the stems and leaves from the cauliflower and chop the florets into pieces. Add to a food processor and process just until the texture is similar to that of rice. If you don’t have a food processor, you can grate the cauliflower on a cheese grater or cut it up.
  • Sauté the cauliflower “rice” in a nonstick skillet over medium heat and cook until, in about 6-8 minutes, it begins to be translucent.
  • In a bowl combine the cooked cauliflower with all the remaining ingredients.
  • Spread the dough evenly on the pan – ¼ to ⅓ inch thick. The pizza should be approximately 9-10 inches in diameter.
  • Bake for 25-30 minutes or until the crust is golden and crispy around the edges and cooked through the center.
  • Remove the crust from the oven.
  • Cover with the pizza sauce and the ingredients you want to add. Be careful not to add too many heavy ingredients, as you don’t want to overload the crust.
  • Bake the pizza for an additional 5 minutes or until the ingredients are hot and the cheese has melted. Allow the pizza to cool for 2-3 minutes and then cut and serve immediately.
