Salad for the avocado diet

Time to prepare: 15 minutes.
Yield: for 1 or 2 people.

Ingredients

  • 1 tablespoon of olive oil.
  • Set of half a lemon.
  • ¼ of a teaspoon of salt.
  • ¼ of a teaspoon of ground pepper.
  • 1 avocado, halved and pitted.
  • 1 tomato, cut into chunks.
  • ½ yellow bell pepper cut into thin strips, stemmed and seeded.
  • 1 clove garlic, minced.
  • 1 sprig of coriander, finely chopped.
  • 1 piece of onion, finely chopped.
  • 1 tablespoon pine nuts divided (optional).

Instructions

In a bowl, combine the olive oil, lemon, salt, and pepper, then whisk. Cut the avocado in half, removing the skin. Place the avocado in another bowl and cut: add the tomatoes, pepper, garlic, coriander, onion and pine nuts. Pour the result on top of the avocado, coating it evenly. Serve immediately.
