This recipe has a 1 ½ cup yield, is gluten free, refined sugar and dairy free.

Ingredients:

  • 1 can (400 ml) whole coconut milk (room temperature is best).
  • ½ teaspoon pure vanilla extract.
  • 1 teaspoon dried lavender flowers (or a few drops of edible lavender essential oil).
  • 2 tablespoons raw honey (or some vegan sweetener).

Instructions:

  • Put all the ingredients in the blender and blend until smooth. Don’t over mix as it can separate the mixture.
  • Place the ice cream mix in a freezer container and place in the freezer.
  • Freeze the ice cream for 4-6 hours, stirring once an hour.
  • Remove from the freezer before serving and let it thaw for about 5-10 minutes. Serve and enjoy!
