Ingredients: Yield: 2 fruit cakes
- 1 ½ cups almond flour.
- ½ teaspoon of sea salt.
- ½ teaspoon of baking soda.
- ½ cup dates, pitted and chopped.
- ½ cup of raisins.
- ½ cup of dried cherries.
- 1 cup of chopped walnuts.
- 4 large organic eggs.
- 2 tablespoons of 1 tablespoon of coconut sugar or else you can use grated panela / sucanat / piloncillo.
- 1 tablespoon of vanilla extract.
- 1 tablespoon of orange zest.
- 1 tablespoon lemon zest.
Instructions
- In a large bowl, combine the almond flour, salt, and baking soda.
- Add the dried fruits and nuts.
- In a medium bowl, combine the eggs, oil, coconut sugar, vanilla, and citrus zest.
- Mix the wet ingredients into the dry ones.
- Put the dough into 2 greased mini loaf pans.
- Bake at 180° C for 20-30 minutes.
- Let cool and serve.
