That is why on this occasion, and thinking in this preventive way for our health, we have prepared for you a delicious recipe for a fruit cake without gluten, without refining and without preservatives. A totally healthy fruit cake that you won’t feel guilty after eating it due to its great taste and good ingredients.

Gluten-free fruit cake

Check out the following ingredients and go for them to experiment right now with this delicious cake sweetened with coconut sugar, dates, raisins and dried cherries, to accompany if desired with a cup of dandelion root tea, or to make as gift to friends and neighbors during the holidays.

You will be pleased to find that this easy recipe is rich and moist and versatile enough to make year round.

Ingredients: Yield: 2 fruit cakes

  • 1 ½ cups almond flour.
  • ½ teaspoon of sea salt.
  • ½ teaspoon of baking soda.
  • ½ cup dates, pitted and chopped.
  • ½ cup of raisins.
  • ½ cup of dried cherries.
  • 1 cup of chopped walnuts.
  • 4 large organic eggs.
  • 2 tablespoons of  1 tablespoon of coconut sugar or else you can use grated panela / sucanat / piloncillo.
  • 1 tablespoon of vanilla extract.
  • 1 tablespoon of orange zest.
  • 1 tablespoon lemon zest.

Instructions

  1. In a large bowl, combine the almond flour, salt, and baking soda.
  2. Add the dried fruits and nuts.
  3. In a medium bowl, combine the eggs, oil, coconut sugar, vanilla, and citrus zest.
  4. Mix the wet ingredients into the dry ones.
  5. Put the dough into 2 greased mini loaf pans.
  6. Bake at 180° C for 20-30 minutes.
  7. Let cool and serve.

You can accompany it with your favorite hot drink, at breakfast, snack, at your celebrations or family gatherings. It is an exquisite bread to enjoy on all occasions.
