Gluten Free Chocolate Coconut Muffins Recipe

Previously they were known as “muffins” but it has become fashionable to call them muffins, delicious sandwiches that can be prepared in my own way. But this recipe is also gluten-free, with ingredients that give you craving like the flavor of chocolate and coconut. Below you will find a recipe to prepare gluten-free muffins, made with cocoa, coconut and pure honey, a series of very healthy ingredients that taste great.

Ingredients:

  • 1/4 cup coconut flour.
  • 2 tablespoons unsweetened cocoa powder.
  • 1/2 teaspoon of baking soda.
  • 3 large organic eggs, at room temperature.
  • 2 tablespoons coconut oil.
  • 3 tablespoons of pure honey.
  • 1/4 cup dates, pitted and finely chopped.
  • 2 tablespoons dried cherries (optional).

* It has a performance for 5 to 6 people.

Preparation:

In a bowl, sift the coconut flour, cocoa powder, and baking soda. In another bowl, lightly beat the eggs. Add the honey and coconut oil. Mix the wet and dry ingredients together and stir until all the pieces have dissolved. Gently mix the finely chopped dates and cherries into the mixture.

Bake for 20 minutes or until the tester comes out clean. Decorate by sprinkling some grated coconut on top of each muffin. Better eat warm.
