- ½ cup coconut oil.
- 4 tablespoons of honey.
- 1 teaspoon gluten-free vanilla extract.
- 1 cup coconut flour.
Stuffed
- 90g dairy-free cream cheese (vegan – commonly almonds).
- 1/3 cup dairy-free sour cream (vegan – commonly soy).
- ¾ cup of honey.
- 3 eggs.
- 3 tablespoons lemon juice.
Meringue
- 7 egg whites.
- Dash of cream of tartar.
- 1 ¼ cups of honey.
- 1 teaspoon gluten-free vanilla extract.
Instructions:

- Preheat the oven to 160 ° C (325 degrees F) and line the cake pan with parchment paper.
- In a mixing bowl, combine the coconut oil, honey, and vanilla and beat well until combined.
- Add the flour and mix on medium speed until the ingredients are well combined.
- Cover the cake pan with the batter and spread it evenly.
Stuffed
- Whip cream cheese without milk and sour cream in mixing bowl until smooth.
- Add the honey and continue mixing until smooth and creamy.
- Beat the eggs one at a time until well combined.
- Add the lemon juice and beat with the rest of the mixture.
- Spread the filling on the pastry base.
- Bake in the preheated oven for one hour.
- Cool on wire rack until cheesecake is at room temperature.
- Place in the refrigerator for 3-4 hours.
Meringue
- Preheat the oven to 190 ° C (375 degrees F).
- Use an electric mixer to gradually beat the egg whites until frothy.
- Add the cream of tartar and continue beating until the mixture hardens.
- Add the honey slowly and beat the mixture over high heat until the meringue mixture is thick.
- Add the vanilla extract and beat the mixture quickly.
- Spoon the meringue into the cooled cheesecake.
