Exquisite gluten-free apple bread with rosemary and lemon

Ingredients:

  • 1 1/2 cups almond flour.
  • 1/4 cup coconut flour.
  • 1/4 teaspoon of baking soda.
  • 1/4 teaspoon of sea salt.
  • 2 tablespoons fresh rosemary, finely chopped.
  • 2 eggs.
  • 2 teaspoons vanilla extract.
  • 1/2 cup of pure honey.
  • 3 tablespoons coconut oil.
  • 1 apple, cored and finely chopped.

Lemon glaze

  • ¾ cup organic powdered sugar.
  • 1-2 tablespoons lemon juice.

Makes a loaf

Instructions:

  1. Preheat the oven to 350 ° F / 175 ° C. Grease a medium-sized loaf pan (22x10cm).
  2. In a large bowl, combine the almond flour, coconut flour, baking soda, sea salt, and rosemary. Stir until well combined. Reserve.
  3. In a medium bowl, lightly beat the eggs. Add the honey, coconut oil, and vanilla. Mix the wet and dry ingredients until just combined. Add the finely chopped apple pieces.
  4. Transfer the mixture to the pan and bake in a preheated oven for about 40 minutes or until the cake tester comes out clean. Turn off and cool on a rack.

Lemon glaze

Mix powdered sugar with 1-2 tablespoons of lemon juice. Stir until the sugar dissolves in the juice. Add more lemon juice until the mixture is the desired consistency. The mixture should be a thick, smooth liquid, not too runny.

Drizzle over cake and leave for 15 to 20 minutes to harden.
