Delicious Dairy Free Chocolate Coconut Ice Cream
This chocolate ice cream tastes the same as regular ice cream. It is delicious and full of creamy flavor, only there is a huge difference in something special: it is 100% healthy for you. Ingredients
- 2 cups full fat coconut cream or coconut milk.
- 300g (10.5 ounces) frozen (peel the banana, cut it into quarters and freeze at least 12 hours before making this recipe).
- 2 oz. (60 g) fresh dates (pitted).
- 2 tbsp. organic cocoa powder.
- 2 tbsp. nut butter (any variety will work, but you can also use butter or peanut butter).
Instructions
- Place the ingredients in a blender starting with the coconut / milk cream, then the cocoa, almond or walnut butter, dates, and finally the frozen bananas.
- Blend until very smooth. Taste to make sure it’s sweet enough – if not, add a little more dates.
- Pour the mixture into an ice cream machine and process for 20 minutes until thickened. Move to a container in the freezer and allow it to sit for 1-2 hours, then serve.
- If you don’t have an ice cream maker, you can simply skip this step and go directly to a freezer container, although this will require several hours to set. Don’t let it get too solid, but if that happens, then allow it to thaw for about 15 minutes before taking it out.
- Serve with some dried fruit, or a drizzle of maple syrup or agave syrup if desired.
