Breakfast with Quinoa, apple and cinnamon

Ingredients to make this nutritious and delicious breakfast.

  • Half a cup of quinoa.
  • 1 cup of water.
  • 1 apple, thinly sliced.
  • 1/3 cup raisins.
  • Half a teaspoon of cinnamon.
  • Half a handful of dried cranberries.
  • Half a handful pecan nuts (or regular walnuts), lightly toasted.
  • 2 to 3 teaspoons unsweetened  or coconut cream.
  • 1 to 2 teaspoons agave syrup or honey (optional).

Preparation:

  1. Rinse the quinoa and bring it to a boil alongside the water in a medium saucepan. Reduce the heat and simmer for 5 minutes.
  2. Add the apples, raisins, and cinnamon. Cook over low heat until the water has been absorbed.
  3. While the quinoa cooks, toast the walnuts in a dry skillet for a few minutes over medium heat.
  4. Transfer to a serving bowl and sprinkle cranberries and walnuts over the quinoa. Serve hot with tablespoons of yogurt or sweeten with honey if desired.
