How to make a healthy mocha brownie (coffee and chocolate)?

Ingredients for the brownie:

  • 2 cups of walnuts soaked.
  • 1/2 cup of soaked almonds.
  • 1 cup of raw cocoa powder.
  • 2 cups of dates.
  • 2 teaspoons of coconut oil (melted).
  • 1 teaspoon of vanilla extract.
  • A pinch of sea salt.

Process:

  1. Process the walnuts and almonds in a food processor until finely ground.
  2. Add the cocoa powder, vanilla, coconut oil and salt and process a little more.
  3. While the processor is running, add the dates one by one.
  4. You will end up with a mixture that looks very brittle and dry, but sticky and integrated. (If it doesn’t stick well, add a couple more dates).
  5. Firmly press your brownie mixture into a mold coated with a little coconut oil.

Ingredients for the topping:

  • 2 cups of soaked cashews.
  • 1/2 cup of espresso (or any good quality strong coffee will work just fine).
  • 1 teaspoon of coconut oil (melted).
  • 1/4 cup of agave honey or pure honey.

Make the topping in a high speed mixer. Pour over the brownies. Chill in the freezer or fridge for about 2 hours. To serve a small portion. Delicious dessert for your celebrations!
